1.紫皮长茄子4根,洗净

14.加多半碗高汤(我用的排骨汤,用刚才装酱汁的碗装的,所以才是这个颜色)

15.汤汁搅匀,烧开,尝尝味道,有点淡,我又加了点盐,又加了点糖(糖提鲜的,加了1调料匙,尝不出甜味)

16.下入炸过的茄条,不要随意搅动,轻轻推匀,保持茄条顺溜的长条状

17.中小火烧至茄条入味,汤汁剩个锅底,加入蒜末,烧至出蒜香味

18.加水淀粉,勾薄芡出锅

小窍门&温馨提示
1、油温高点炸茄子吸油相对较少。
2、做茄子,特别是有酱的茄子,加蒜末绝对是点睛之笔。
