1.准备好所有小料;

2.小火凉油下锅(可以加少许水), 加入豆豉、姜末、蒜末、红辣椒末和葱白;

3. 一起煸炒出香味;

4.炒好后装入小碗中放凉,将鮰鱼切成小块;

5.调味料放凉后再放入鮰鱼中, 加入适量的盐和料酒;

6. 搅拌均匀腌制十五分钟;

7.将腌好的鮰鱼块放入小碗中;

8.烧锅开水,大火蒸上十分钟;

9.蒸好后拿出来, 放入小葱末。
小窍门&温馨提示
1. 将豆豉、姜末、蒜末、红辣椒末和葱白(记得不要加绿葱末部分)一起煸炒一下,让它香味更容易散发出来;记得这些调料料很容易糊,所以炒时要小火, 还可以适量加点水, 让它水分全部散发后油煸香就行了;
2. 炒好的调味料一定要放凉后拌入鮰鱼中,再加入点盐和料酒一起腌制十分钟; 如果热的会调味料腌制时破坏鱼的鲜味;
3. 腌好的鱼码放在盘中,水开后大火蒸上十分钟即可,拿出来后再表面上撒些小葱末。
