1.买的不是很辣的辣椒,忘记名字了??

2.清水淘洗几遍。

4.灯笼椒也淘洗干净。

5.控水。

6.锅里适量油烧微热,辣椒倒进去。一开始辣椒上有水汽,小火慢慢炸,不时翻一下,防止炸制不均匀。

7.小火炸至微微焦红。我大约炸了七八分钟。注意火候。宁愿炸的稍微欠一点,不能炸糊了。捞出晾凉。刚捞出来的时候还有点软,晾凉用手一捏就碎。

8.灯笼椒也炸一会儿。

9.炸干水汽。

10.捞出晾一下。

11.把辣椒籽捞干净,炸糊了会发苦。辣椒籽不要扔,这个也搅拌进去,很香的。

12.放入洋葱,香葱,桂皮,小茴香,香叶,花椒。

13.把这些香料炸至微微焦黄,捞出来。小茴香和花椒可以和辣椒一起搅拌,口感更丰富。

14.晾凉的辣椒放搅拌杯子里,适量盐,炸过辣椒的油倒入适量,这样好搅拌。

15.搅拌成辣椒油。

16.搅拌好的辣椒油倒入罐子里。

17.余下的油放熟白芝麻,把油芝麻倒入打好的辣椒里面即可。
