1.准备好原材料;

2.热锅凉油, 将鲶鱼块放入锅中煎;

3.鲶鱼块煎至金黄后翻面将另一面也煎至金黄;

4.加入姜片、花椒和大料等继续煎一下;

5.烹入高度白酒;

7.加入少许水炖煮五分钟;

8.大火收汁, 加入适量的盐调味;

9.再放入蒜进去煮一下,收汁好后, 盛入盘中, 表面撒上小葱末。

小窍门&温馨提示
1. 鲶鱼块一定要先将双面煎至金黄后再加入调味料烧煮;
2. 鲶鱼腥味比较大,加入高度白酒帮助去腥,且调味料加入重点;
3. 鲶鱼比较嫩,注意不要翻动过多避免将鱼弄碎了。
