小窍门&温馨提示
1、鸭肉味腥:腌制时需加入料酒和鱼露,五香粉、黑胡椒粉或白胡椒粉,可以有效地去除腥骚味
2、腌制加了蚝油,盐量要略减少些
3、炒制时:无需多放油,利用鸭脯上的肥肉部分炼出来的油味道更香
