料酒适量,

盐适量荔芋扣肉的做法步骤

1.将五花肉切成等长的条, 下入冷中煮, 同时加入几片姜和少许高度白酒一起煮;

2. 煮至筷子很容易插入进去后拿出来;

3. 用叉子在肉皮表面叉些小孔;

4. 趁热在表皮上刷层蜂蜜和少许盐;

5. 烧锅油,油六七成热时将表皮朝下放入里面炸至金黄后捞出;

6. 再将切成同样大小块的荔浦芋头也放入里面去炸;

7.将五花肉和荔浦芋头都炸至金黄后捞出;

8. 将切片的五花肉和芋头块中放入腐乳汁、生抽、料酒、姜末、白糖、胡椒粉和适量盐,拌均匀后腌制一下;

9. 腌制好的肉片和芋头片相隔,并且肉片朝下码放好在碗中, 再将腌制的汤汁也倒入里面;

10. 摆放好的芋头扣肉放入高压锅中,上面扣上一个盘,气阀叫后转小火20分钟;

11. 西兰花放入盐和几滴油的开水中焯一下;

12.将蒸好的芋投扣肉倒扣在盘子中,

13. 四周都围上焯好的西兰花, 表面上撒些小葱末;

14. 热气腾腾上桌了。
小窍门&温馨提示
1. 选用肥瘦相间的五花肉, 先焯煮一下, 控干水分后用叉子在猪皮表面扎些小孔, 并涂抹一层蜂蜜(或者是酱油上色),再猪皮先朝下面开始炸, 这样是给五花肉表皮上色并去除油分, 炸至金黄即可;
2. 荔浦芋头切成五花肉块同样的大小也放入油锅中炸至表面金黄, 这样蒸出来的味道更香;
3. 五花肉凉后切片后, 与芋头片同时加入腐乳汁、生抽、料酒等原料腌制一下;
4. 腌好的肉片与芋头片间隔的码好, 五花肉表皮朝下, 连同腌制的料汁一起倒入碗中, 高压锅蒸上25分钟,倒扣后将四周围上焯过水的西兰花。
