:带鱼250克 北豆腐200克

2.配料:葱、姜、蒜、干红辣椒调料:花椒、大料、盐、生抽、蚝油、糖、胡椒粉、料酒

3.带鱼洗净后,切成段状,在带鱼段两面各划一字刀,北豆腐切成与带鱼段大小一致的块状

4.平底锅加油,将带鱼段、豆腐块分别入锅煎至表皮成金黄色

5.煎至表皮成金黄色盛出备用

6.锅中再加油烧热,放入佐料炒香

7.再依次加入生抽、蚝油、糖

9.将煎好的带鱼段、豆腐块放入锅中小火炖制

10.再加入盐、胡椒粉调味,加入料酒去腥,再转至小火炖至汤汁变浓稠时撒入葱花即可
小窍门&温馨提示
1、带鱼要在表皮改刀这样炖出来的带鱼非常入味;
2、豆腐最好选择北豆腐,北豆腐比较耐炖。
