1.杏仁粉和糖粉混合均匀后过筛

3.蛋清2加入蛋白粉和7克细砂糖,用打蛋器打发到出现短小直角即可

4.37克细砂糖加入11克清水

5.小火慢熬到118度

6.分5到6次倒入打发的蛋白中高速搅打降温,每次倒进去的时候不要淋到打蛋头

7. 用硅胶刀混匀tpt和蛋清

8.取1/3蛋白霜倒入杏仁糊内

12. 装入裱花袋

13.在马卡龙模具上垂直的挤上均匀的圆形,挤好后,轻震两三下盘,用牙签挑破一些大气泡

14.白色色素混合几滴水,用牙刷弹上马卡龙上

15. 烤箱70度预热好关电,放入马卡龙在中下层,关上烤箱门大约10分钟即可晾干皮

16. 直接把烤箱转至上下管热风循环140度烤15分钟即可
