1.精猪肉切薄片,加蛋清、淀粉、清水上浆备用。

2.油菜洗净,焯水。

3.将油菜用凉开水投凉,整齐码放碗中。

4.炒锅内加油,葱姜爆香。

6.加入清水烧开。

7.将肉片下入,用筷子滑散,烧开。

8.倒入油菜碗中,将香葱花放在最顶上。

9.炒锅加油,烧至七成热,改小火加入麻椒、干红辣椒炒香。

10.浇在葱花和肉片上。
小窍门&温馨提示
因为郫县豆瓣酱是很咸的,所以这道菜基本不用食盐。肉片水煮时间不宜过长,否则容易老。最后的麻椒和辣椒一定要用小火,油可适当多一点,不然容易糊,失去香味。
