小窍门&温馨提示
1、干木耳需泡发(泡发时可加入少许白糖,可加快泡发时间)
2、咸肉需根据咸度提前浸泡
3、竹笋要放入淡盐水中焯水以去除竹笋的苦涩味
4、百叶要放入淡盐水中焯水以去除百叶的豆腥味
5、原汤可提前熬制大骨汤或用鸡架骨熬汤备用
