15.取20g面糊+可可水,拌匀,装入裱花袋中。

16.挤在金盘的油纸上,放预热好的烤箱,烤2分钟。

17.取出,把油纸拖出来放另一个冷金盘。

18.面糊从高处缓缓倒入金盘中,端起烤盘晃动,将面糊铺匀,轻震几下去除气泡。

19.放入烤箱、上下火烤25分钟。

20.取出,轻震一下,用脱模刀四周划一圈,表面垫上油纸后倒扣在网架上表面再盖一张油纸。趁蛋糕卷还有余温,马上撕去底部的油纸,再盖上待凉。

21.将蛋糕卷好,两头捏紧,放冰箱冷藏半小时。
小窍门&温馨提示
1、鸡蛋要冷藏过的,分离蛋清在干净无油的碗;
2、烘烤时间和温度请视自家烤箱实温调整。
3、切蛋糕卷:刀用热水烫一下,每切一下都要擦干净热一下再切,一刀过不拖拉。
