1.准备糯米粉和冷大米粥

2.把米粥倒入糯米粉里拌匀(我没有写米粥的用量,不同牌子的糯米粉吸水量也不同,可以边加边揉)

3.揉成光滑有韧劲的粉团

4.猪肉里磕入一个鸡蛋再加入料酒,生抽和老抽按顺时针方向搅拌有粘性

5.分成均匀的坯子

9.油温5分热下入饼

10.中火煎至底部变黄后加入清水盖上煎

11.煎至水分收干后打开再翻面煎一下即可出锅
小窍门&温馨提示
1.糯米粉一定要揉均匀有粘性,这样做出的饼才不会裂开,加入冷的白米粥揉面使得面团更有粘性。
2.煎饼加水的时候不要把水淋在饼上,要沿着锅边加入,加水的时候会噼里啪啦油爆,小心烫到。
3.这饼一定要等到水分全部烧干才可以打开,再两面煎一下,表皮就会外脆里糯。
