7.搅拌成细腻的糊状。

8.蛋白分三次加入细砂糖,共加糖30克,打至提起打蛋头可见小弯钩。

9.取三分之一蛋白到蛋黄糊里。

10.切拌均匀。

11.再把蛋黄糊倒入蛋白盆里。

16.一一挤在油布上。

17.入预热好的190度烤箱,烤90秒左右,取出。

18.把剩下的面糊全部倒入烤盘里。

19.用刮刀刮平,入预热好的烤箱烤18分钟左右,我放的中下层,上火185度,下火150度。

20.烤好后取出,移到烤网上晾凉。

21.翻面,揭去底部的油布,我这个油布揭早了,刚取出我就揭下来了,结果波点这面是光滑的,不是毛巾面的样子。

22.把蛋糕体再次翻面(带波点的一面朝下),移到大油纸上。

23.抹果酱。

25.又做了一个可可波点的,把红曲粉换成可可粉,用同样方法做的,里面抹的巧克力酱。这个油布就是放凉后揭的,出现了毛巾面。
