1.材料:鲫鱼
调味:醪糟、香油、酱油、老抽、白糖、葱段、姜片、料酒、郫县豆瓣酱、醋、干辣椒各适量

2.鱼处理干净,头部往下开刀轻拍取出鱼线。

3.鲫鱼放入容器,用盐、料酒、醪糟、姜片、葱段腌制片刻。

4.锅置火上油烧热,放入鱼炸至金黄捞出控油。

5.取小碗,放入酱油3勺、老抽2勺、白糖1勺、醋4勺、香油1勺,调成味汁。

6.锅置火上下入葱姜煸香,倒入豆瓣酱、干辣椒段炒出红油。

7.倒入调好的味汁,码入炸制的鲫鱼。

8.倒入开水没过鱼身,大火煮沸,转小火焖至1小时即可。(中间可续水一次)
