1.称取杏仁60g、榛子仁80g,用擀面杖碾碎一些。

2.放入烤箱烘烤一下:上下火,230度10分钟。

3.冷却后的坚果仁,和巧克力片(或巧克力豆)60g、蔓越莓干50g一起拌匀。

4.称取T65小麦粉350g和大米粉150g。

5.称取10g精盐,和小麦粉一起拌匀。

6.称取5g酵母,用100g净水搅拌溶解。

7.倒入酵母液,使其被小麦粉充分吸收。再分几次加入20度净水320g,边加水边观察面的软硬。

8.趁面团还没成型,加入软化的黄油。

9.再加入坚果和巧克力。

10.揉成光滑的面团,盖上微湿的感觉,放入温暖密闭空间里进行第一次发酵:1小时30分钟。

11.第一次发酵结束后,分成8个小面团。盖上微湿的布,静置15分钟。

12.静置结束后,将面团中间掏空,整理成甜甜圈的形状。盖上微湿的布,放入密闭温暖的空间,进行第二次发酵:2小时。

13.第二次发酵结束后,在面团上划号切口,并用筛网撒上生小麦粉。

14.预热烤箱:230度10分钟。之后,在最底层的空烤盘里倒入50g左右的水(水浴法)。

15.再将放有面团的烤盘放入烤箱,开始烘烤:上下火,230度,20分钟。

16.面包出炉后,取出自然冷却。
