1.带鱼冲洗(勿刮掉银鳞),剁掉头、尾,剪开肚子去內脏,清除腹部黑膜,剪去鱼鳍;

2.剁成适合的块。

3.泡椒三分之一切破,泡姜切颗。

4.油热、小火,下花椒、豆瓣酱、泡椒、泡姜、白糖,炒香;

5.倒入带鱼,加适量水、放胡椒粉;
