1.备肉馅(肥三瘦七)。

2.备淀粉,鸡蛋,葱姜水。

4.备白醋,蕃茄酱,白糖。

5.肉馅中加料酒、胡椒粉、盐、生抽半只鸡蛋以及葱姜水(用小漏勺捞出葱姜)、淀粉搅匀。

6.将白醋、白糖、蕃茄酱、盐、淀粉及适量的水,调成糖醋汁。

7.锅置旺火上,添油烧至六成热,将搅拌好的肉馅用手挤成丸子投入油锅中浸炸。

8.丸子全部入锅。

9.丸子炸至皮稍硬、将熟透时捞出。

10.待油温升至七成热时,丸子入锅。

18.迅速颠翻几下,使丸子均匀的裹上糖醋芡汁。

小窍门&温馨提示
糖、醋、盐三味要定准,兑汁时,淀粉要适中,不宜稀。葱姜不宜直接放入肉馅,否则容易炸糊。
