鸡翅中,
8~10个
辅料:
米酒,
(白酒代替)100ml,
香油,
50ml,
酱油,
50ml,
葱适量,
姜,
4~6片,
蒜,
7~9个,
料酒适量,
冰糖,
5g,
辣椒,
(不吃辣可以不加)1个三杯鸡翅的做法步骤

1.鸡翅放冷水里解冻后,用刀前后各喇2刀,目的是放血水。

2.切2片姜,放5ml料酒,冷水下锅,焯水。水沸以后多煮一会儿,让里面的血水彻底出来。

3.焯水后捞出冲凉水以便去除血沫,备用。准备葱姜蒜和冰糖。

4.米酒:香油:生抽=2:1:1。比例记好了,根据菜量适当增减。我没用米酒,北方买起来费劲,所以就地取材用了白酒,大概半碗的量。

5.将之前的香油倒入锅里,倒入葱姜蒜,炒香。

6.倒入鸡翅中,大火炒至表面金黄。我做的只是微微发黄,可能香油倒多了。

7.依次倒入白酒、冰糖以及生抽,盖上锅盖小火煮15分钟。不时用铲子翻炒一下,防止糊锅。

8.开盖大火收汁。

小窍门&温馨提示
不用放水。冰糖放多的话锅底会粘粘的,香油多的话,出锅会有多余的油,所以适量!本人是个厨房新手,所以对适量理解的不好,还得继续努力,嘿嘿!
