1.准备鸡蛋,先用水清洗干净,准备一个彩盘,深度不要太浅~装不下,无需太深,难熟。

2.将鸡蛋打入另一碗中,加入适量的盐和白糖。

3.用筷子搅打。

4.充分搅打,像这样还有大泡泡的,还要继续搅打几下哦。

5.搅打直到都是小泡泡了就可以了。

6.加入温或冷开水,我是直接用纯净水。

7.继续搅打充分,使水和鸡蛋液完全混合。

8.倒入备好的菜盘里。

9.此时表面都是泡泡。

10.拿根葱或者菜叶梗,把泡泡赶到一边,目的使蒸出来的表面如镜。

11.在一起了,而且看起来也少了很多哈。

12.静置一会儿,泡泡更少了。

13.放入蒸笼,开火蒸制,火不要开得太大,中火即可。

14.蒸了2分钟的样子。

15.蒸了5分钟的样子,轻松动一下蒸屉,会看到中间部分还很水还浪得动的感觉。

16.蒸8分钟的样子,基本凝固了,关火。

17.可以用葱装饰一下表面。

18.加了一点点生抽,盖上盖子,再焖三五分钟即可出锅。

19.超级嫩滑细腻,入口即化。

20.当然,也可以用其他材料装饰,随自己心意。
小窍门&温馨提示
1.不建议放碗里蒸,因为深度太深,很容易失败;2.搅打充分很重要;3.开中火即可;4.时间不宜过长,一般7~8分钟即可,当然和量及水温都有密切关系,所以蒸制过程要时时关注。
