高筋面粉,

1.把毛豆剪去两头洗干净,加水、盐、香叶、大料、桂皮和干辣椒,大火煮开后转中火煮几分钟,熟了就可以关火了

2.煮好后有时间的话就多浸一阵子会更入味,尝起来的毛豆粒是盐味是要足够的,不然加面团里最后成品出来会很淡。毛豆剥好称出100g待用

3.做燕麦汤种:把牛奶和麦片一起放入锅中

4.小火煮到微沸就关火晾凉

6.选择和面程序20分钟,和面完成

7.面团取出,加入毛豆粒,在面板上再用手揉匀

10.放烤箱内选择发酵功能30度一小时左右进行基础发酵

11.面团发到2倍大,天热,室温发酵也可以

12.基础发酵完成后取出排气

13.平均分割成6个面团

14.滚圆盖上保鲜膜松弛15分钟

15.松弛好后再次排气滚圆,排入烤盘

16.继续放烤箱内选择发酵功能进行第二次发酵,35度40分钟

17.发酵完成后取出,面团表面筛高粉

18.用割包刀割口

19.放入预热好的烤箱内,200度中层烤20分钟左右

小窍门&温馨提示
1、如第二天吃的就密封好室温保存,吃不完的冷冻,吃之前取出化冻
2、燕麦汤种揉面团时可以预留一勺,看面团软硬程度再决定是不是要加完。如果都加完面团还偏硬,那就再补一点牛奶,这个面团的软度比甜面包略硬一点点。
3、请按自家烤箱习性调整温度和时间,配方中时间温度仅供参考
