1.处理好虾仁

2.虾仁加少量盐,料酒腌制一会,倒出多余的水分,加适量的淀粉和少量的蛋清(不要加过多的蛋清),反复抓匀,备用。

3.锅里加大量的油,三成油温的时候,下入虾仁滑油。然后捞出备用。(记住油温,千万别用高温,否则虾仁就不嫩了)

4.准备瓜片和葱姜蒜

5.鸡蛋提前炒熟。备用。(鸡蛋液里面加几滴水,一定要高温煎蛋)

6.锅里留少许底油,下葱姜蒜炝锅。

7.下入黄瓜片,快速翻炒

8.下入鸡蛋和虾仁

9.加盐,胡椒粉,白糖,翻炒均匀出锅。
