3.猪蹄剁成小块,处理下猪皮上的毛。用清水浸泡猪蹄1个小时,中途换一次水。

4.锅中放清水,水量要多一些,可以没过猪蹄。在水中加两片姜和一段葱,适量料酒。

5.将猪蹄放进锅里,开大火。

6.煮到水沸腾后,继续加热20-30分钟,这时会有很多脏的浮沫。

7.将猪蹄捞出,迅速用冷水冲洗2、3遍,去除脏沫。

8. 将猪蹄放在电饭煲或高压锅中,放入香料和葱姜。

9.加入适量料酒。

10.加入适量生抽。

11.加入适量老抽。

12.加入一点点的醋。

13.向锅中加入开水,没过猪蹄。

14.电饭煲或高压锅加热。我用福库的万能炖功能,定时30分钟。

15.炖30分钟后的样子,水基本没减少。

16.将猪蹄和汤倒入炒锅,放适量冰糖,大火加热。这个时候可以品尝下汤汁的味道,如果味道淡可以加点盐。

17.至汤汁收干即可出锅。

小窍门&温馨提示
1.最后加冰糖,不仅可以提鲜增加风味,菜菜出锅还特别亮。
2.焖锅不一样,要适当调整焖煮的时间,因为后面还有收汤的过程,不要炖的太烂,口感就不好了。
3.冷水冲洗猪蹄的过程,由于冷热的交替,也可以让猪蹄更紧致Q弹。
