1.主材:北豆腐、香菇、青菜心。

2.调料:酱油、陈醋、郫县豆瓣酱、剁椒酱、洋葱、香葱、蒜、姜、八角、桂皮、香叶、糖。

3.香菇洗净焯水,加点盐杀菌。

4.豆腐切1公分左右片;洋葱切条、姜切沫、蒜压扁后切碎。

5.加热炒锅,凉油中火,豆腐片两面煎炸成焦黄色。

6.另起灶,把洋葱码再砂锅底部,再码入煎好的豆腐。

7.炒锅再次加热,煎完豆腐的余油先把香叶、桂皮、八角煸出香味。

8.再下姜蒜末,煸炒出香。

9.加入一勺郫县豆瓣酱和一勺剁椒酱、半勺糖。

10.倒入酱油、陈醋,调匀。

11.加一碗水火高汤,待汤料开锅。

12.砂锅中码入香菇(可适当切开)。

13.开锅的汤料倒入砂锅。

14.让豆腐全浸入汤料中即可,中火炖十分种左右,开盖收汁。中途轻轻用筷子扒拉几下,确认没有粘底即可,不可大翻。

15.汤汁收的差不多后,延锅边码入青菜心,关火,撒上香葱碎。豆腐跟香菇很入味,要尝一下再决定是否要加盐,加多少盐。
