1.定量称取300g面粉;

2.添加干酵母粉4g,并与面粉搅匀,备用;

3.定量称取白糖80g,并用130g的80℃温水,将糖完全融化;

4.将化好并降至室温的白糖水倒入面粉中,搅拌,至块状絮状;

5.用手揉成光滑的白面团,并用保鲜膜将盆子封好,静止发酵至约2倍大小(25℃室温环境约2~3小时);

6.紫薯去皮,称取140g,切成片状,放到蒸锅中蒸煮20分钟;

7.蒸熟后稍微放凉,用筷子搅碎至小颗粒,备用;

8.发酵至2倍原大小的面粉团;

13.取一份白面团擀成圆饼,将紫薯面团包裹入其中;

14.包好后,收口朝下;用小刀横竖切两刀(可以在刀面上稍涂抹点油或面粉,防止黏刀不好切口)

15.将做好的馒头,放入蒸锅中,静置20分钟进行二次发酵,然后大火蒸15分钟左右,关火后,虚蒸3-5分钟后再开锅盖;
