1.备好食材。面粉要选富强粉,它属于中筋面粉,最适合烙饼,高筋面粉不要选,筋力高烙饼硬

2.面粉的2/3先用开水烫成面絮,再把剩下的1/3面粉用凉水拌面絮

3.两种面絮用筷子拌匀(拌匀和面才不烫手)

4.揉成面团,饧半小时以上(粘手的话稍微饧一下会好揉)

5.大葱切葱花

6.面案上撒干面粉, 饧好的面团放在上面不用揉,直接沾面粉搓成粗条,切成等大的大面剂

7.取面剂擀成圆面片,刷一层植物油,撒入少许盐入底味
