1.面粉50克,黄油50克,和成酥皮面团

2.面粉100克,葡萄籽油30克,开水40克,和成水皮面团。和面时先把油倒入盆里,用开水冲一下,晾凉再和面,这样处理的油,做出的皮格外酥

3.水皮油皮饧一小时左右,用水皮包裹油皮

4.先用擀面杖压开,再擀成片

5.上下对折

6.再左右对折,像叠被子一样

7.饧10分钟左右,再压、擀开,重新叠一遍被子,总共叠3遍

8.最后擀成厚2--3毫米的大片
