鸡精适量酱猪蹄的做法步骤

1.蹄髈处理干净细毛,焯水去血沫,肉汤留一碗备用

2.焯好的蹄髈抹老抽上色,静置一会待上色均匀

3.上好色的蹄髈入油锅煎至两面金黄,皮上冒泡

4.一锅水,入葱、姜片、蒜、大料、茴香、香叶、陈皮 (我用的是自己晾晒的橙皮)入蹄髈

5.煮开后去浮沫

6.烹入料酒,小火焖炖90分钟

7.加入之前留用的那碗头汤,加糖、盐调味,大火收 汁即可 蹄髈做好咯!

8.这样做法不油腻,味道浓但不重,肉质软烂,冷着热着都好吃
