1.把嫩豆腐切块;胡萝卜、青椒、洋葱切片;芹菜切段;大蒜切片,葱切段。

2.黑鱼去骨取鱼肉,片成片。

3.用水冲洗一下。

4.沥干水份后,加入盐、料酒顺一个方向抓上劲。再加入蛋清,继续用手抓匀。最后加入少许玉米淀粉抓匀至粘稠。

5.锅中加少许底油,下入八角、花椒、蒜片、葱段炒出香味,再加入所有
辅料
翻炒均匀。

6.然后加入郫县豆瓣酱炒香。

7.倒入热水烧开,加入生抽、火锅底锅定好味,略煮 。

8.待所有香料味道都混合后,捞出锅内所有食材不要。

9.把浆好的鱼片一片一片放入锅中。颜色变白即可关火。

10.嫩豆腐提前焯一下水,倒入砂锅内。

11.把鱼片和汤汁也倒入锅内,放火上再次烧开后关火。在上面撒上葱花、花椒、蒜末、干辣椒圈和孜然粉。

12.然后用热油激一下即可。
