1.牛肉炒熟后加盐是为了防止变老
2.豇豆提前焯熟是因为豇豆熟的时间比胡萝卜和牛蒡长,如果生的一起炒,等豇豆熟了胡萝卜和牛蒡就老了
3.牛蒡用水泡是为了防止变色
