1.牛奶和油提前放入容器,搅拌均匀后放一边(进行乳化)。

2.鸡蛋蛋白蛋清分离。

3.在打散的蛋黄里边搅边加入乳化好的牛奶油。

4.筛中称取低筋面粉100g。

5.先过筛一遍,第二遍过筛到蛋黄糊里。

6.搅拌均匀,没有粗颗的粉块。

7.冷藏过的蛋白加入几滴柠檬汁,不用加糖和其他东西,直接用电动打蛋器打发至如图的尖角。

8.先预热烤箱160度。

9.取一部分的蛋白糊至蛋黄糊里,翻拌均匀。

10.翻拌至如图状。

11.再把蛋黄糊倒入到剩下的蛋白糊盆里。

12.翻拌均匀后倒入垫有油纸的烤盘中,抹匀,震出气泡。

13.入烤箱中层,调制150度,烤40分钟。
