1.带鱼处理干净后擦干水分,用刀横着将带鱼的一面贴骨片下

2.带鱼的肉和主骨分开,两面都一样

3.再将切下来的带鱼切成小段

4.鱼骨剁成段

5.带鱼段和鱼骨放入碗中,调入料酒、白胡椒粉和肉馅调味汁,拌匀后腌制20分钟左右

6.腌好后,将带鱼肉用牙签串起来

7.锅中倒入较多的油,中火加热,待油温5、6成热时,下入带鱼,炸至金黄捞出(注意,炸带鱼时会爆,油会溅的到处都是,可以用锅盖挡住自己,以免被油烫伤,注意安全!)

8.随后将鱼骨也一样炸至金黄捞出

9.根据个人喜好撒点孜然粉和辣椒面拌匀即可

小窍门&温馨提示
1、炸带鱼时一定要注意安全
2、鱼骨尽量别扔,炸了之后非常酥脆,好吃又补钙
3、炸好的带鱼最好趁热吃,凉了以后会变软,口感不佳
