1.小米椒洗净。

2.擦干水,晾干。

3.切碎。

4.大蒜去皮切成细末。

5.将蒜末与辣椒末混合,拌匀。

6.放40克盐,大概是两汤匙。

7.再放10克鸡精(也可不放),拌匀。

8.放20毫升香油。

9.再放2大勺高度数白酒。

10.装在干净、干燥的容器中,不要全部塞满,要留一点一点空间,最后封口前要在表面再撒一层盐,浇一层香油和白酒(各种大概1小勺的量,1小勺7.5ml)。

11.封好的剁椒放在室内阴凉通风处放置半天,然后放入冰箱,2-3天后就可以拿出来食用了!
