1.杏仁粉和糖粉混合均匀后过筛

2.在TPT挖个小坑,倒入19克的蛋清,再轻轻盖住

3.准备好19克蛋清

4.把9克细砂糖糖倒入蛋清内,加入蛋白粉

5.用打蛋器搅打至硬性发泡,出现如图的短小尖角

6.13克清水和42克细砂糖倒入小奶锅内,小火煮沸到118度

7.打蛋器边高速搅打蛋白,边倒入煮好的糖水,糖水可以分4-5次加入,每次都要高速搅打降温,糖水要避免淋到打蛋头和碗壁

8.打到出现很有光泽的大约2/3指长的硬弯勾即可

9.用刮刀把蛋清和TPT材料压拌混合均匀

10.取1/3蛋白霜加入杏仁糊内,加入1/2茶匙的竹炭粉,压拌均匀

11.再加入1/3蛋白霜,轻轻切拌均匀

12.最后的1/3加入也是轻轻切拌均匀

13.最后的状态是略稠的飘带状,如果是很顺滑的,那可能面糊就太稀了

14.装入裱花袋

15.挤出龙猫的形状,一定要间隔开

16.放入烤箱用热风循环大约40度左右烘15分钟就可以结皮了,不黏手的状态

17.放入烤箱中下层直接转130度烤制16分钟即可(烤箱的温度的自己掌握,我的烤箱温度偏高,世纪温度是150左右)大约5分钟左右就出裙边

18.烤好后的马卡龙放凉透后再取出

21.用白色糖霜画上眼白和肚子,干透后再用黑色的糖霜点上眼睛和胡子,花纹,干透备用
