1.准备所需食材

2.鳗鱼斜刀将鳗鱼骨刺剔除

3.老姜切末,海苔切丝,香葱切葱花

4.鳗鱼洗净后放入碗里放入一半的老姜末,放入一勺耗油

5.鲜磨两颗花椒面

6.放入一勺料酒

8.锅里倒入适量的油,小火放入冰糖x(捡了懒应该把冰糖砸碎更好

9.冰糖慢慢在融化,倒入一勺生抽

10.放入老姜末

11.放入一勺清酒

12.待到冰糖全部融化放入鳗鱼先煎一下表皮

13.然后加入80ml左右的水量中火一边烧一边收汁,待到粘稠收干即可装盘

14.装盘后放上海苔丝和撒上葱花即可

15.看起颜色就十分的诱人吧,精致美味有营养!如果添上一碗米饭再夹上一块汤汁浓稠的鳗鱼放于之上,美味的蒲烧鳗鱼饭妥妥的就在眼前了
小窍门&温馨提示
1.鳗鱼剔骨后更易入味,装盘也更美观,如果不会剔骨也可以省了这步,不太影响口味 2.冰糖最好碾碎了再入锅容易融化而且不易糊锅 3.烧制鳗鱼时火力不可太大,特别是汤汁要收干时改小火注意不要糊锅
