1.3个鸡蛋将蛋黄和蛋清分别装入不同的盆内,要求无油无水干干净净,然后3个蛋黄加20克细砂糖,用手动打蛋器打均匀;

2.倒入椰子油搅打均匀备用,不用用力打发;

7.搅打到湿性发泡状态后最后一次加入10课细砂糖后直接打发到干性发泡;

8.干性发泡,蛋头轻轻提起蛋白呈现直立小尖角就可以了;

9.用橡皮刮刀取出一小部分蛋白放进抹茶面糊内与之翻拌;

10.把翻拌好的抹茶糊全部倒入蛋白里;

14.135克牛奶倒入小煮锅中,加入30克细砂糖后,不停搅拌加热煮沸;

15.将煮沸的牛奶倒入蛋黄抹茶糊里搅拌均匀;

16.过筛抹茶牛奶液到小煮锅;

18.将120毫升淡奶油用电动打蛋器打发至出现纹路的状态;

20.将两者搅拌均匀;
