主料:
无盐黄油,
110g,
蛋黄,
2个底筋面粉,180g砂糖,
15g,
橙汁,
150ml,
水,
500g,
鸡蛋,
1个,
生姜粉,
半小勺,
肉桂粉,
半小勺肉豆蔻粉,半小勺核桃等坚果,少许

1.首先要做派皮,面粉和黄油像我这样用手捣碎搅拌在一起,一定要趁黄油还没开始软化前迅速搅拌,这样做出的派皮才会非常酥脆

2.搅拌完便成细沙状态时倒入蛋黄和砂糖,搅拌均匀

3.最后可以揉成一团就停止揉面,用保鲜膜包好,放进冰箱冷藏30分钟

4.30分钟以后把面团拿出来,放到两张油纸间,用擀面杖擀薄

5.在烤盘里涂均黄油,把面团上一张油纸去掉后倒扣在烤盘上,铺均匀以后把另外一张油纸也拿掉

6.再用擀面杖这样滚几下后把多余的部分拿掉

7.用叉子在上面叉出洞洞

8.再放上米或豆子之类来防止派皮受热膨胀后,放进预热到180度的烤箱烤25分钟左右

9.开中火,锅里倒入去皮切块的南瓜,倒入橙汁和水,砂糖和少许生姜粉或姜末,搅拌均匀后煮40分钟左右

10.直到水分蒸发南瓜变粘稠就出锅

11.完全放凉以后倒入搅拌机里,再倒入鸡蛋和蛋黄,乳酪,搅拌成泥

12.再倒入肉桂粉和肉豆蔻粉,搅拌均匀

13.最后倒入烤好的派皮上,表面抹均匀后继续在180度烤25分钟就完成拉~

14.烤好的南瓜派上可以配一些自己喜欢的坚果

15.再挤上一点奶油,味道更佳香醇哦~
