1.低筋粉、糖、盐一起过筛成为混合的粉料

2.黄油切小块倒在粉料上

3.用手轻轻的搓揉,直到粉料与黄油搓成不规则的粉粒

4.蛋黄跟牛奶倒入搓好的粉粒里

5.将干湿材料慢慢混合,注意不要过度搓揉,以免面团出筋,造成烘烤时派皮过度收缩

6.将面团放入袋子里冷藏、松弛至少30分钟以上

7.取松弛好的派皮用擀面杖擀开

8.轻轻的放在烤盘上面

9.压紧,把多余的拿掉

10.用小叉子在上面叉出小眼,以免烤制时膨胀变形

11.派皮上盖上锡纸,上面压上重物,可以是石子也可以是些豆类

12.放入烤箱上火180度,下火190度,15分钟(每个烤箱温度不同,视情况而定)

13.15分钟后拿出

14.上面铺上无花果,放入烤箱同样温度再烤5分钟的样子

小窍门&温馨提示
1.揉面团时尽量不要过度揉搓,以免面团出筋,影响烤制出来的成品。
2.可以把无花果换成其它水果,譬如黄桃,味道也挺赞的。
