1.葱切成葱花、姜、蒜均切成末;

2.新鲜鳝鱼去骨洗净切丝,将鳝丝放入滚水里焯一下捞出沥干;

3.加热炒锅,放入适量食用油,爆香葱花、姜末、蒜末;(此处不用完准备的葱花和蒜末)

4.闻到香味后,下鳝丝翻炒片刻,下黄酒爆香;

5.调入老抽、生抽、白糖、白胡椒粉继续适当翻炒;

6.加少量水淀粉勾芡再适当翻炒;

7.翻炒均匀后装盆,在鳝丝面上稍压出个小窝;

8.将葱花、蒜末、白胡椒粉放入小窝;
