1.超市买来猪小排。我们把它泡出血水反复洗干净冷水下锅,加料酒焯水。

2.鹌鹑蛋煮熟去壳备用。

3.锅里放油,五成油温放入鹌鹑蛋。

4.开大火炸虎皮状。

6.锅底留油。放入葱姜蒜煸炒出香味。

7.放入焯好水的排骨。炒出排骨里多余的水分。

8.放入郫县豆瓣酱。

9.放入生抽,老抽。快速翻炒均匀。

10.倒入刚好没过排骨的高汤。大火煮开。

11.放入白糖和五香粉,转小火炖一个小时。

12.中途不要忘了搅拌一下,以免糊锅。

13.开大火。放蚝油。

14.大火收汁,放入炸好的鹌鹑蛋均匀翻炒。

15.等到汤汁收的差不多的时候放入鸡精。

16.撒上小葱,花儿特别的鲜美。
小窍门&温馨提示
小火慢炖的时候,我们可以去做一下其他事情,但是大火收汁的时候一定要守在锅边,以免糊锅。为了保持鹌鹑蛋的清香。所以我们是用五香粉代替香料。
