1.取榴莲肉,去核备用;

2.榴莲肉加100g牛奶用料理机搅打成细腻的榴莲泥,越细越好,我还过了一下筛;

3.准备两片戚风蛋糕,用剪刀剪掉一圈,比六寸模略小一点;我这个用土鸡蛋烤的戚风颜色真的黄到了极致!

4.取12g吉利丁粉,加75g凉白开搅拌均匀,放一边让它溶胀;

5.200g淡奶油中加20g糖粉;

6.用电动打蛋器搅打至出现明显纹路,提起打蛋器有弯弯的尖角;

7.将榴莲牛奶泥加入打发的淡奶油中,搅拌均匀;

8.溶胀好的吉利丁粉隔热水融化成透明的吉利丁液;

9.稍微晾凉至不烫手后加入淡奶油榴莲糊中;

10.上下翻拌成均匀的榴莲慕斯糊;

11.六寸活底模中放入一片戚风蛋糕;

12.倒入一半榴莲慕斯糊,震平,再加上一片戚风蛋糕片;

13.倒入剩下的慕斯糊,用硅胶铲抹平表面,震两下震去气泡,至冰箱冷藏4小时以上,我是冷藏过夜;

14.第二天取出蛋糕,用吹风机热风沿着模具吹两圈,轻轻托起活底就可以脱模;

15.烘焙用巧克力币隔热水融化成液态,再放置至凝固;

16.用小勺轻轻刮下巧克力碎;

17.将巧克力碎装饰在蛋糕表面,再撒上适量扁桃仁片;
小窍门&温馨提示
1、戚风蛋糕的做法可参考我之前发布的菜谱——六寸戚风;
2、配方的量做一个六寸慕斯正好,榴莲用量比较多,做出来的慕斯有浓郁的榴莲味道,非常好吃;
3、榴莲泥过一下筛会比较好!
