1.先做无油奶黄馅 ,蛋黄加糖充分搅打至淡黄色。

2.筛入低粉和玉米粉搅拌均匀。

3.牛奶小火不断搅拌至煮沸,缓缓倒入蛋黄糊中并不断搅拌。

4.重新倒回锅中,不火加热,不断搅拌至糊状。

5.一看到沸腾就马上离火,冷却备用。

6.面粉中加一点点盐和一点白糖,倒入用温水化开的酵母,和成软硬适中的面团。

7.取一小块面团加黑芝麻酱和成黑色面团,太干可加一点水揉。

8.放温暖处发至两倍大后揉至原大,粘手可加少量粉一起揉。

9.分成若干个剂子,揉一遍。

10.取一个剂子擀成边缘薄中间稍厚的面片。

11.放入奶黄馅,刚做好的奶黄馅较软,可以冷藏后使用就会方便很多。

12.像包包子一样收口封住。

13.封口朝下放。

14.把黑色面团擀薄片。

15.用一个花嘴按一个个小圆圈。

16.把小圆圈用手捏成一头稍尖的椭圆。

17.在尖点的一头用吸管按一个眼睛。

18.分别沾水粘到包好的奶黄包上,再分别做耳朵和嘴巴粘好。

19.二发至变大变轻盈,冷水上锅。

20.水开后约7分钟,关火再焖3-4分钟开盖。
