1.准备材料

2.炒锅把水烧开,放入猪脚煮两分钟,里面放一点花椒,姜,小葱,和料酒去腥

3.捞出猪脚,用夹子趁热把猪脚上的毛拔掉

4.取一个砂锅,放入猪脚,加入八角,胡椒粒,桂皮,陈皮,干辣椒,香叶,姜片,蒜立,香葱,料酒,老抽,生抽,加入适量水,大火烧开和转小火炖两个小时左右

5.花生米加水泡一下

6.猪脚煮烂后取出,把骨头去掉

7.煮猪脚的汤用筛子过滤一下,把调料过滤掉

8.汤汁入炒锅继续加热,倒入花生米煮烂

9.猪脚上取出的肉用小刀切小一点

10.把肉放入汤里继续煮

11.煮到汤汁浓稠的时候调入适量盐,倒入容易取出的模具里,上面趁热撒上蒜苗

12.冷到常温后放入冰箱冷藏两个小时左右就凝固了,倒在案板上切开就可以了

小窍门&温馨提示
调料也可以用纱布抱起来煮,这样就省掉了过滤的步骤
因为放的花生米,切的时候不怎么好切,切的时候小心点
