1.猪蹄两个,因为用喷灯烤过猪毛,表面有些焦黑,放水里泡着,然后刷洗干净。这两个猪蹄特别胖,2个猪蹄顶得上一般的3个猪蹄了。

2.斩成小块。

3.凉水下锅,水开后再煮两三分钟,充分去除血沫。

4.捞出,再反复冲洗几次,直到把浮沫都冲洗干净。

5.红腐乳3块。

6.加水调成腐乳汁。

7.准备冰糖、葱姜、辣椒、八角。

8.锅里注油烧热,下猪脚。

9.煸炒至表面焦黄。

10.下葱姜、八角、辣椒炒香。

11.加生抽、老抽。

12.翻炒均匀。

13.倒入腐乳汁。

14.翻炒均匀。

15.加入热水,没过猪爪。

16.加冰糖。

17.转入砂锅,中火烧开后转小火慢炖1.5小时。

18.此时汤汁剩下1/3左右,猪蹄熟透但不是特别烂,加盐调味,继续小火慢炖30分钟左右,大火收汁即可(收汁时忘了拍照)。后期要时不时翻动猪蹄,防止糊底。

19.成品,咸香中带着一点甜味,好吃不腻。
小窍门&温馨提示
砂锅慢炖的过程中,随着汤汁渐少,要时不时地搅拌一下,防止糊底。因为猪蹄含胶质较多,比较容易拖底焦糊。
