1.油麦菜去掉根部。

2.掰成两段。

3.洗净,放盐水中浸泡十分钟。

4.黄瓜洗净。

5.把黄瓜和油麦菜浸泡好后控水备用。

6.大蒜拍碎,这个步骤不要用刀直接切蒜,拍一下再切,会有蒜汁爆出,增加浓郁的蒜香味。

7.蒜碎倒入小碗中。

8.加入白糖提鲜。

9.加入适量香油,用于调酱汁浓度。

10.最后倒入麻酱,我用的是现成的袋装麻酱,本身有咸度,就没有再添加其他调料。如果用原味麻酱或者花生酱,可以加耗油、生抽、适量水进行调制。

11.将蒜末与麻酱拌匀,视酱料粘稠程度适量添加香油。

14.加入食盐拌一下,略微变软即可。

15.黄瓜皮不要腌太久,保持脆爽口感,能够卷蔬菜的时候不折断就行了。

16.取黄瓜片铺在砧板上,将油麦菜取适量整理好,放在瓜皮一端。
