1.剥好的虾仁,竹笋去壳去老根后洗净

2.淀粉加入清水拌匀,准备菠菜汁

5.剁成虾蓉

6.放入盘里加入白酒,2克盐,磨入黑胡椒后拌匀

7.再把水淀粉捞起加入

8.拌匀后反复捞起虾泥不断的往盘中摔打成有粘性把盘子倒扣也不会掉下的虾蓉

9.竹笋冷水下锅焯水后捞起

10..再把虾蓉醸入竹笋内

11.冷水上锅蒸熟后熄火

12.另起锅倒入菠菜汁和加入2倍的清水烧开后加入熟猪油和盐

13.加入鸡粉调味

14..再用水淀粉勾芡后熄火出锅

15.先把虾滑竹笋装入盆里再把芡汁淋上即可享用

1.选择活虾做出的虾滑口感最佳
2.虾滑内水淀粉不宜加多,捞起2次的量即可
