1.鲤鱼收拾干净

2.鳃下约一厘米处切一刀,抽出里面的白线(据说这是腥筋,去除可除腥)

3.看,好长一条腥筋

4.鱼两面各划几刀,塞入姜片,鱼肚子里也塞进姜片,鱼身鱼肚里抹点盐,再洒适量料酒,腌制二十分钟,去腥入味

5.腌鱼时准备调料:葱姜蒜切碎,香菜切末,郫县豆瓣酱准备好

6.腌制好的鱼去除姜片,一分为二(因为鱼太了,我家的锅煎不下整条)

7.擦干鱼身表面水分,拍上一层淀粉,下油锅煎炸(油不用太多,能淹没单面鱼身就够用)

8.一面炸好后翻面

17.水开后下炸好的鱼

18.中火烧制,其间晃动几次,防止糊底。烧十来分钟后小心翻面,让另一面入味(也可不翻面,但要不时将汤汁浇到露在外面的鱼身上)

19.待汤汁所剩不多变得浓稠时,将烧好的鱼取出装盘,拼接在一起

20.撒上一层香菜末
