1.准备面粉约一碗半左右

2.韭菜半斤 洗净切碎备用

3.新鲜肥瘦相间猪肉馅半斤

4.面粉加水慢慢和面 面团揉至不粘手表面光滑 用保鲜袋装好 静置约30分钟饧发

5.先将肉馅中倒入豆油 花椒面 打散搅拌均匀;待肉馅搅拌散开后 放入韭菜 食盐 味精 将馅料顺时针搅拌 直至肉馅均匀 并上劲

6.台面撒上面粉 把面团搓成长条 然后揪成或者切成 等量大小面块压扁

7.将小面块均匀粘好面粉 逐个压扁

8.用擀面杖擀成中间厚四边薄的饺子皮 一切就绪开始包饺子吧

9.包好的饺子底部粘上足够的面粉 摆好 以防粘连

10.在包饺子的时候就煮好一锅水 饺子包完的时候 就可以下锅煮饺子 饺子好了准备吃饭吧(煮饺子就不细说了)
小窍门&温馨提示
1.和馅的时候要注意馅料不能太干 如果太干可以用豆油或者高汤水等
2.肉馅要买当天新鲜的
3.面粉尽量使用饺子专用面粉
4.夏季和冬季温度不同记得饧面的时间要有所区别
5.煮饺子的时候在水里放适量食盐防止粘连
