1.备好原材料:带鱼,长白萝卜,小葱,姜片;

2.带鱼洗净,剪断,再用剪子理开带鱼的肚腹处,撕掉黑膜。鱼头处需撕掉鱼鳃,鱼身两边的鳍也要剪掉。带鱼用流动水反复冲洗干净。用适量食盐、胡椒粉抹匀,腌制片刻;

3.长白萝卜切片;小葱打结;

4.腌制好的带鱼,拭干水分,裹上淀粉,再拍掉多余的淀粉;

5.锅置火上,烧热后,倒入适量植物油烧热;放入带鱼炸至微黄捞出;油可以不用放那么多,半煎半炸;

6.兑一份料汁:适量生抽、老抽、冰糖、料酒、高汤混合均匀;

7.炒锅不放油,码上萝卜片;

小窍门&温馨提示
1、炸带鱼的油可以不用放那么多,半煎半炸;
