卤汁适量酱卤捆蹄的做法步骤

1.准备蹄膀一只,请商家取出大骨后,用刀刮去猪皮里的污垢,后洗净备用

2.将蹄膀皮朝下,切花刀后加入花椒、桂皮、大料、生姜及料酒拌匀后腌制一夜后备用

3.将蹄膀用棉线扎紧后,套上布袋,再用线扎紧后备用

4.将卤水烧开后加入蹄膀开大火煮开后,转小火煮45分钟后备用

5.待卤水晾凉后再开大火烧开,小火煮20分钟后备用(重复上述步骤3次)

6.将蹄膀浸泡一夜后再将卤汁烧开后将蹄膀重新再煮10分钟后取出晾凉备用

7.将卤蹄膀去除棉线及布袋后备用

8.将卤蹄膀切薄片后码放在盘中,调酱汁蘸食
