八角,

香叶,

生抽,
两勺,
料酒,
一勺,

1.将三黄鸡剁成小块。

2.锅内放凉水,放入鸡块大火烧开。

3.鸡块焯水时将葱姜切末备用。

4.锅内水烧开后将鸡块捞出,用冷水冲去浮沫,沥干水分备用。

5.将鸡块中加入一勺生抽,一勺料酒腌制20分钟左右。

6.干辣椒切段,取一半小米椒剁碎。(小米椒剁碎后会增加菜的辣度,也可以省略这步)

7.将剩余的小米椒和杭椒切小段备用。

8.锅内放油烧至六成热后,放入八角、麻椒和香叶爆出香味。

9.加入葱姜末炒香。

10.加入干辣椒段和剁碎的小米椒翻炒均匀。

11.加入一勺生抽。

12.调大火,放入腌好的鸡块。

13.将鸡块和锅内的配料翻炒均匀。

14.加入一小勺糖翻炒均匀。

15.继续大火爆炒至鸡肉将熟后翻入杭椒和小米椒段翻炒至辣椒断生。

16.加入适量盐翻炒均匀后出锅。
